Green Beans are part of the legume family Fabaceae and known scientifically as Phaseolus vulgaris. Legumes are nitrogen fixing plants, and green beans when grown can fix some nitrogen back in the soil. This vegetable can be grown in both bush form and vine form. Bushes can reach up to 20 inches and vines can reach up to 10 feet long. Green beans are very universal and can be consumed canned, frozen, and fresh and can be steamed, stir-fried, or baked. One very popular dish prepared in the USA during the Thanksgiving holiday is green bean casserole.
