Summer Squash is a member of the Cucurbitaceae family known scientifically as Cucurbita pepo. Summer squash is available in several different varieties and each variety has a unique shape, color, size and flavor. The entire squash is edible including the flesh, skin and seeds. This is a very versatile vegetable that can be grilled, sautéed, steamed, or used in a stir-fry. Steaming summer squash is the best way to retain all the nutrients.
